Vegan Summer Rolls

Few things beat a meal that is tactile, flavourful and good for you. These summer rolls were introduced to me by my favourite German Anne also known as my only German 😂.

This is a super simple by impactful meal. Ideal for a dinner party wherein you can add different ingredients to suit each diner.

< strong>For the rolls you will need:< ice paper sheets get enough so everyone has 2 1 mango 1 avocado 1 Red pepper A bunch of Coriander/Cilantro A bunch of Mint 1 bunch Spring Onion 2 sweetcorn cobs Shredded beetroot 2 carrots 1 cucumber
< strong>For the sauce you will need :< weet chilli dip to serve on its own or 1/4cup Peanut butter, 1tbsp soy, 1tsp ginger and 1tsp garlic to make a tangy peanut butter dip or And 2 tbsp soy + 1tsp honey, 1tsp Siracha, 1tsp chilli flakes, 1tsp cumin to make a spicy soy dip. Directions:< strong>
< ulienne vegetables or cut into strips 0.5mm thick. Make your dips Boil water and wet your rice paper one by one making sure to finish each one adding you vegetables and hens before making the next one. Annnnd serve!
