Fluffy Vegan Pancakes

I firmly believe that everyone male or female needs to have at least 3 breakfast recipes, 3 lunch recipes and atleast 3 dinner recipes they can whip up easily under their belt.

Food and feeding people I love  is one of my favourite things.

I eat a mostly vegan diet and don’t like eggs so making fluffy ‘American’ style pancakes  has been difficult and I’ve experimented a lot with different recipes until I came up with this one and it works.

Serves 2 (2 medium/large pancakes each)

Ingredients:

  • 1 cup plain flour
  • 1 cup (almond/coconut/oat/i personally try to avoid soy) milk
  • 1 tablespoon baking powder
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons brown/coconut sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Method:

Mix all your ingredients together till you have a smooth batter – use a whisk or blender.

Heat 1tbsp of coconut oil or vegan butter on a medium heat and then one at a time or afew at a time pour your batter (1/2 cup is the ideal fo each pancake).

Cook for 2 minutes each side and voila foolproof vegan pancakes.

Serve with all the usual accoutrements – maple syrup, fruit, lemon, vegan sausages? whatever takes your fancy.
