Raspberry and Chocolate Cheesecake

Cheesecake is one of the simplest desserts like ever. Yesterday I made this Raspberry and Chocolate Cheesecake for my brother and his friends… I’m an awesome sister like that you see ;).
To serve 6 Your going to need:
180g digestive biscuits
80g melted butter
90g milk chocolate
300g cream cheese
200ml double cream
50g sugar
120g raspberries
chocolate icing sugar
extra chocolate for decoration

1. Weigh your digestives. Crumble them in a food processor, add melted butter and blend again mix with a spoon so its all combined. Place in a cake ring with a push-up base and smooth it all down with a spoon.
2. Combine your double cream, cream cheese and sugar together until its all smooth then add a tsp of vanilla extract and wash then add yours raspberries.
3. Chop up your chocolate and melt it in the microwave stirring at 15 second intervals until its melted. Add it to the mixture stir and add it all into the cake tin. Flatten it with a palette knife and place in the fridge for two hours.
 4.When its ready dust with icing sugar and melt more chocolate to go ontop and enjoy.
It might not look pretty but it tastes divine!
