This yummy Vegetarian Bean Chilli with Sweet Potato and Potato Wedges otherwise known as Game Day Chilli as I usually make this for the boys and I when we watch Rugby (yaaay) or when they force me to watch Football (booo).If you ask me Football isn’t a real mans sport lol but enough of that here is a super yummy and simple recipe, Its so simple even a man can make it… Just ask my dad lol.
I made this today for the game tomorrow and you can also freeze it if you make a big batch!
To serve 4 you will need :
3 baking potatoes &I sweet potato , unpeeled and each cut into 8 wedges
4 tsp olive oil
1 red onion , roughly chopped
200ml vegetable stock
1 yellow pepper
2 x 410g/14oz cans mixed pulses (I use Napolina Spicy Bean Mix)
400g can chopped tomatoes
3 tablespoons of dark chocolate , chopped
Sour Cream (half fat is just as good)
‘Cajun Spice Mix’ (1 tablespoon of paprika, thyme, chilli powder,black pepper, cayenne pepper and half a tablespoon of salt)
Oh and it tastes better with beer… if you need an excuse lol
Step 1 – make the spice mix, but the cut potato wedges into an oven tray and drizzle with olive oil and grill for 30 minutes
Step 2- Add your onion and pepper your pot with the olive in it, fry for 3 minutes, add your beans and stir for 5 minutes, add your tomatoes then your stock and season.
