Vegan Banana Muffins
Decided to bake for the girls
(as we are all pretty stressed out with our
impending hand in… who said Fashion was an easy course?)
and ofcourse decided to share this recipe with you all.
Its a super quick and simple recipe for a tasty but ‘healthy’ vegan snack.

You will need: 
3 bananas
1/4 cup  melted vegan margarine
3/4 cup or 85g  sugar
250g plain flour
1 tsp. salt
1 tsp. baking soda
Optional: 1 cup chopped of  walnuts or oatmeal, raisins, chocolate chips, currants, coconut.
(This recipe makes 8 muffins or a small banana loaf)Tools? Well you’ll need a masher,  a bowl, a sieve, a tsp, silicone muffin tray or bread tin and wooden mixing spoon.
1. Mash bananas (overripe ones are best – much easier to mash).
 2. Add the margarine and sugar. Mix well.
 
3. Sift the flour, salt, and baking soda together and add to the banana mixture.
 4. Mix until the flour is throughly blended.
5. Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

 

Et voila- super yummy vegan banana muffins.
