Raw Vegan Parfait

Happy Monday peeps… I have the perfect cure for Monday blues my raw vegan parfait. Super simple to make, guilt free and really tasty.

Ingredients:

Fruit-

2 handfuls of mixed berries or try a mango and nectarine parfait

Crunch-

1 cup granola (make your own or use Jordans)

1/3 cup almonds

1/3 cup chia seeds

Cashew Cream-

1 cup raw cashews (pre soaked for at least 2 hours and then drain the water)

⅓ cup water

1½ tbsp maple syrup or agave syrup

½ tsp vanilla

¼ tsp cinnamon (optional)

Instructions :
Nuts/Seeds
Put all seeds and nuts into a food processor and process for a few seconds. Don’t overprocess or it will be too powdery which isn’t want you want you want some chunks!
Cashew Cream
Add all ingredients to a high-powered blender and blend until smooth (add a bit more water if you want to thin it out some more).
Putting it together
I use Kilner jars 250ml size – Start with a layer layer of berries, then nuts/seeds/granola mix, then cashew cream, then more fruit.
Storage/ alternatives
Cashew cream will stay in the fridge for up to 3 days so make a batch if you want, if you don’t like cashews or aren’t vegan perhaps use greek yogurt with a drizzle of maple syrup (thats how I make it for my mom).

    I need to try this. I wonder if you know any alternatives for yogurt that aren’t soy products? I’m lactose-intolerant but still eat greek-yogurt and cottage cheese because too much soy is bad for you.
    Plus I LOVE dairy products but hate how I feel afterwards. This life. Sigh.
