When its hot the last thing I want is to spend forever in the kitchen, this recipe is quick easy and yummy!
I love this Quinoa Salad its satisfying and light too.
To Serve 2 you will need:
1/2 cup quinoa, rinsed and drained
1/2 can black beans, rinsed drained
1/2 fresh mango, cubed
1/2 ripe avocado, cubed
1/2 cucumber, seeds removed and diced
1/4 cup mint, chopped
1/4 cup fresh coriander (cilantro), chopped
30ml olive oil
1 tbsp lime juice
1 clove garlic
salt and pepper
Step 1 – Put your quinoa in 2 cups of water, bring to the boil and simmer.
In a bowl add oil, lime and garlic and whisk together.
Step 2 – Chop up all ingredients
Step 3 – When you quinoa is nice and fluffy add it to the bowl, add all the other ingredients season and stir.
Put it in the fridge while all the flavours mix.
Serve in 20 or leave it till your ready to eat.
