It’s a quick way of getting plenty of veg and depending on how you make it it is also super filling!
I love honey roasted parsnips, parsnip mash and parsnip soup and they are all perfect for the current season.
This is my super easy roasted parsnip soup recipe! It is super big on taste you guys.
Easy Roasted Parsnip Soup recipe
3tspb Olive Oil (I use chilli olive oil)
Ginger (1 inch)
To make it vegan use a substitute ‘cream ‘250ml Cream (I actually use half of this for my own soup)
2.5 pints of stock (I use oxo)
4 Sprigs of Thyme
2 Springs of Rosemary
2 Garlic cloves
For the vegetable crisps:
half of – beetroot, parsnip, carrot, sweet potato and turnip
using a potato peeler to make strips fry until golden and let them dry.
(or buy Kettle Chips Vegetable Crisps)
Chop up your onion, garlic and ginger and lightly fry for two minutes
Add your chopped onion, garlic, and ginger to a baking tray also add your parsnips, seasonings and oil and mix well.
Place in the oven
After about 25-30 minutes and a little of your stock into your baking tray. Add the rest to your sauce pan.
After 5 minutes mix everything in the baking tray well and transfer it to your sauce pan and add cream.
Mix well and pour into a blender and blend.
Add back to the saucepan and heat through.
